Bibb lettuce in a salad. Kale and bean soup. We put greens in almost everything we cook. Spinach is great in pasta sauces … just enough to add punch and we char kale over an open wood fire when we camp.
here in China, they often put lettuce, spinach, etc. in hotpot. It’s really good!
Another great green we use is shiso; we grow it in our backyard garden. It has a wonderfully alluring taste and scent. Great in hotpot with pork. We live north of Roanoke, VA and are apparently the only people near us who have ever heard of it … except the couple down the street who run a Laotian restaurant.
