Ginger Cookies!

Ginger cookies! So chewy and tasty. One of the few cookies I love when not feeling well. Based on a modified old recipe from taste of home.

2 Cups of Flour
1 tsp Baking Soda
1.5 tsp of Cinnamon
1 tsp of Ginger
1/2 tsp of Nutmeg
1/2 tsp of Cloves
1/2 tsp of Salt
1/4 cup of Butter
1/2 cup of Oil
1 cup of Sugar
2.5 TBSP of Molasses
1 Egg

Mix dry ingredients first then combine butter in with hands until blended. Add wet ingredients.

Form into balls and roll in sugar.

Cook on cookie sheet until 350F / 177C for 15 min.

Great for an upset stomach 😍

Cooking with Peanut Butter

Random cooking lesson of the day!  If you ever need to cook with peanut butter (i.e. Heath Peanut Butter Cookies), and you have to measure it out of a jar, don’t bother messing with it straight up.  You’ll only find yourself losing time while trying to get it to quit sticking to your measuring spoon.  The easiest way is to coat the measuring cup/spoon with water first.  Just run it through some water before scooping.  This won’t affect your recipe, but the peanut butter slides out a lot easier!  Cool huh?!?
