Distracted #Cooking!

Lol 😛 Decided to make my mom a treat the other day – #NoBake Oatmeal Chocolate Cookies.

To be fair to myself, I was also baking #stuffedpeppers, answering student messages, and finishing a major project for my MSc.

anyway, I was already experimenting a bit. No #butter, so I tried #CoconutOil. No #PeanutButter, so I made my own.

Got to taste them and mom’s like ‘these don’t taste right. . . ‘

Me: ‘Better term – They taste #disgusting 😱

Us: Why 🤔

Mom: Did you #cook them to a high enough temperature?🙂

Me: ❓❓❓ They don’t cook, they’re #nobake.

Mom: 😳🙄

Me: Wait. . . . ‘checks recipe’ Well *&%$.

Hahahaha! They were supposed to be boiled, and I didn’t cook them at all. No wonder they were #terrible #spititout

#Foodie – Eggs are Gross 😭

One of the daily issues of life in #China is that they don’t clean the Eggs before you get them. So you gotta get the poop off before you can stick ’em in the fridge. These Eggs actually came from #Walmart and were in a real #Egg cart😮 Usually you gotta pick ’em out of a giant pile by hand 😺

​Viola! I make a mean #ApplePie if I say so myself. Little more difficult to do in #China; but still. . . . came out delicious!   People at work appreciate it 😜

Surprise Packages – Andes Candies Cookies

My aunt and I always bake cookies together for major events, and this particular recipe is one of our favorites! Give em a try and find yourself in love with the minty-chocolate taste! 🙂

INGREDIENTS:

  • 1 Cup – Butter (Softened Preferably)
  • 1 Cup – Sugar
  • 1/2 Cup – Brown Sugar
  • 2 Eggs
  • 2 & 1/2 TSP – Vanilla
  • 3 Cups – Flour 
  • 1 TSP – Baking Powder
  • 1/2 TSP – Salt
  • 1 Package of Andes Mints (Set aside 42)

DIRECTIONS

  • Heat oven to 375 Degrees
  • Mix together the butter and sugar (White & Brown) until smooth.  Add in the eggs and vanilla, and mix it well.   Add in the Flour, Baking Powder, and Salt and Mix.  
  • Refrigerate it for 2+ hours (it’s a soft mixture and needs to harden until you can mess with it.  
  • Unwrap the 42 Candies while waiting.
  • Now take the dough and form 1 TBSP of dough around each candy.  
  • Bake 10-12 minutes each.
  • Remove and set on wire racks over top of wax paper.

TOPPING

Use a Saucepan and put the remaining candies in. Melt them and then drizzle the chocolate over the cookies. The wax paper should catch the extras. If necessary, add them back into the pan and re-heat for more chocolate.

Gluten Free Apple Pie

What is your favorite dish?  Mine is always the apple pie, and I make a mean apple pie if I do say so myself 🙂  Unfortunately, this year I had to give up gluten, so I have been attempting to replace all my favorite thanksgiving dishes non Gluten-Free (GF) items.  So here is my new pie recipe!  See?  A blessing!  I did not have to give up any of my favorite treats this year. Gluten Free Corn Casserole

This dish has always been a particular favorite of my family (especially me); the creaminess of the dish fits perfectly with many entrees.  However, usually I would just use butter, cream cheese, milk, and Jiffy Mix.  This year, in replacing my dishes with Gluten Free (GF) products, I had to get rid of the Jiffy Mix.  Here is my replacement dish! It is delicious, and makes an absolutely marvelous holiday side.  Plus, it takes about 5 minutes to make!
